I am interested in learning more about the OpenGD77 firmware, and have a question before I get started please. Which of the compatible handsets would be the simplest to convert? I assume it would be the GD77, is that correct?

GD77 and DM1801 both work OK
RD5R does not work so well because it has inferiour hardware, specifically Hotspot mode won't work becuase the USB crashes if the radio transmits when USB is in use
DM1801 has more memory (1Mb instead of 2Mb) and can store more DMR ID's
But the DM1801 has an inferior audio amp IC, which can result in some noises on the audio under rare conditions
I don't recommend people buy the RD5R, unless they have very limited budget and will never want to use Hotspot mode, and are OK with a radio with inferior RF performance

There is also a version for the TYT MD-9600 in the works, but only at pre-Alpha stage at the moment
