Would it be possible to add an option which swaps the purpose of the up and down keys and the rotary knob?

Right now when using DMR, the rotary knob changes channels and the arrows change contact. I change contact way more often than I change channel, as I only usually use one or two repeaters but several contacts.

It would be nice to be able to use the knob to change talkgroup and the buttons for repeater.

It's not really possible, as it will make it so complicated/inconsistent (like scan start, power, squelch, etc...).

I thought about it too. I can do this in my version of OpenMDUV-NG. At the moment it is very easy to implement

Considering they all need their own firmware, could you enable/disable a menu option which can flip this?
